Ingredients

  • 1 package puff pastry (or homemade pie dough)
  • 1 cup fresh strawberries, diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)
  • 1/2 cup powdered sugar
  • 12 tablespoons milk or water (for glaze)
  • Strawberry slices (optional, for decoration)

Instructions

  1. Prepare the strawberry filling: In a small saucepan, combine diced strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring frequently, until the mixture thickens into a jam-like consistency (about 5–7 minutes). Remove from heat, stir in vanilla extract, and let cool.
  2. Roll out the dough: On a lightly floured surface, roll out the puff pastry to about 1/8-inch thickness. Cut into even-sized shapes, such as hearts or rectangles. Place half of the cutouts on a parchment-lined baking sheet.
  3. Fill and seal: Spoon about 1–2 teaspoons of the strawberry filling onto the center of each pastry base, leaving a small border. Brush the edges with water or egg wash, then place another piece of pastry on top. Press edges together and crimp with a fork to seal.
  4. Bake: Preheat oven to 375°F (190°C). Brush the tops of the hand pies with egg wash. Cut a small vent on top to allow steam to escape. Bake for 15–18 minutes or until golden brown. Let cool slightly on a wire rack.
  5. Glaze: In a small bowl, mix powdered sugar with milk or water until smooth. Drizzle over the cooled hand pies and allow to set before serving.
