2 Cornish game hens

3 cups day-old bread cubes

4 tablespoons unsalted butter

1 small yellow onion, diced

2 celery stalks, diced

3 garlic cloves, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1/2 cup chicken broth

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

2 lemon slices (optional)


Instructions

1. Preheat oven to 400°F (200°C).

2. Rinse and pat dry the Cornish hens. Let them come to room temperature.

3. In a skillet, melt butter over medium heat. Add onion, celery, and garlic. Cook until softened.
