Ingredients
For the Donut Dough:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup whole milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Vegetable oil (for frying)
For the Cheesecake Filling:
- 4 ounces cream cheese, softened
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
For the Strawberry Filling:
- 1/2 cup strawberry jam or preserves
- 1 teaspoon lemon juice (optional)
For Topping:
- Powdered sugar (for dusting)
Instructions
- Prepare the Cheesecake Filling: In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Transfer to a piping bag and refrigerate.
- Prepare the Strawberry Filling: Mix the strawberry jam with lemon juice and set aside.
- Make the Dough: In a large bowl, whisk together flour, sugar, baking powder, and salt. In a separate bowl, whisk milk, egg, melted butter, and vanilla extract. Gradually combine wet and dry ingredients until a soft dough forms.
- Shape the Donut Holes: Roll the dough out to 1/2 inch thick and cut small rounds or roll small portions into balls.
- Heat the Oil: In a deep pot, heat about 2 inches of oil to 350°F (175°C).
- Fry the Donut Holes: Fry in small batches for 2-3 minutes until golden brown. Remove and drain on a wire rack.
- Fill the Donuts: Let the donuts cool slightly, then use a piping bag to inject each with cheesecake and strawberry filling.
- Dust and Serve: Lightly dust with powdered sugar and serve warm.
