Ingredients
For the Crust:
- 2 cups crushed frosted animal cookies
- 5 tablespoons unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy whipping cream
- 1/2 cup strawberry puree
- Pink food coloring (optional)
- 1 teaspoon gelatin (optional, for stability)
For the Toppings:
- 1 cup whipped cream
- 1/4 cup mini chocolate chip cookies
- 2 tablespoons colorful sprinkles
- 2 tablespoons strawberry sauce
Instructions
- Prepare the Crust: Crush animal cookies into fine crumbs. Mix with melted butter and press firmly into the bottom of a springform pan. Refrigerate while preparing the filling.
- Make the Cheesecake Filling: In a large bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until fully combined.
- Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
- Create the Strawberry Layer: Blend strawberries into a puree. Fold into half of the cheesecake filling, adding pink food coloring if desired.
- Assemble the Cheesecake: Spread the plain cheesecake layer over the crust, followed by the strawberry layer. Smooth the top and refrigerate for at least 6 hours, preferably overnight.
- Decorate: Once set, pipe whipped cream on top and decorate with mini chocolate chip cookies, sprinkles, and a drizzle of strawberry sauce.
