Ingredients

For the Crust:

  • 2 cups crushed frosted animal cookies
  • 5 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream
  • 1/2 cup strawberry puree
  • Pink food coloring (optional)
  • 1 teaspoon gelatin (optional, for stability)

For the Toppings:

  • 1 cup whipped cream
  • 1/4 cup mini chocolate chip cookies
  • 2 tablespoons colorful sprinkles
  • 2 tablespoons strawberry sauce



Instructions

  1. Prepare the Crust: Crush animal cookies into fine crumbs. Mix with melted butter and press firmly into the bottom of a springform pan. Refrigerate while preparing the filling.
  2. Make the Cheesecake Filling: In a large bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until fully combined.
  3. Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  4. Create the Strawberry Layer: Blend strawberries into a puree. Fold into half of the cheesecake filling, adding pink food coloring if desired.
  5. Assemble the Cheesecake: Spread the plain cheesecake layer over the crust, followed by the strawberry layer. Smooth the top and refrigerate for at least 6 hours, preferably overnight.
  6. Decorate: Once set, pipe whipped cream on top and decorate with mini chocolate chip cookies, sprinkles, and a drizzle of strawberry sauce.
  7. Slice and Serve: Use a sharp knife to cut clean slices and enjoy chilled!
