Ingredients
8 oz fresh or dried lo mein noodles
1 lb chicken breast or thighs, diced
1 tbsp vegetable oil or sesame oil
4 cloves garlic, minced
0.5 tsp fresh ginger, grated (optional)
0.25 cup low-sodium soy sauce
2 tbsp oyster sauce
2 tbsp hoisin sauce
1 tbsp brown sugar or honey
1 tsp rice vinegar or apple cider vinegar
0.25 tsp red pepper flakes (optional)
2 green onions, sliced
1 tbsp sesame seeds
Salt and black pepper to taste
0.25 cup water or noodle water
Instructions
1. Slice chicken into bite-sized cubes, mince garlic, grate ginger, and chop green onions. In a bowl, mix soy sauce, oyster sauce, hoisin, sugar, vinegar, and red pepper flakes.
2. Cook noodles according to the package. Rinse under cold water and toss in oil.
3. In a large skillet, heat oil over medium-high. Add chicken, season, and cook 5–7 minutes until golden. Remove from pan.
4. In the same skillet, sauté garlic and ginger over medium heat until fragrant.
5. Add sauce to skillet and let bubble slightly. Return chicken and stir to coat.
6. Add cooked noodles and toss with tongs until well coated and heated through. Add water if needed.
7. Stir in green onions, plate, and garnish with more green onions and sesame seeds. Serve hot.
