Ingredients

2 1/4 tsp active dry yeast

1 tsp sugar

3/4 cup warm water

2 cups all-purpose flour

1 tsp salt

1 tbsp olive oil

1 cup cooked shredded chicken

1/4 cup BBQ sauce

1 1/2 cups shredded mozzarella cheese

1/2 cup pickled jalapeños, drained

1/4 red onion, thinly sliced

2 tbsp chopped fresh cilantro

1 garlic clove, minced

Olive oil for brushing crust

Cornmeal or flour for dusting peel

Instructions

1. In a bowl, combine warm water, yeast, and sugar. Let sit for 5–10 minutes until foamy. Add flour, salt, and olive oil. Knead 6–8 minutes until smooth. Cover and let rise for 1 hour.

2. Preheat oven to 500°F (260°C) with pizza stone or baking steel inside for 30 minutes.

3. Toss shredded chicken with BBQ sauce until well coated. Add black pepper or chili flakes for extra heat if desired.

4. Stretch or roll dough into a 10–12 inch circle on floured surface or parchment.

5. Brush dough with olive oil and minced garlic. Layer with mozzarella, BBQ chicken, onions, and jalapeños.

6. Transfer to preheated stone or baking sheet. Bake 9–12 minutes until golden and bubbly.

7. Cool for 2–3 minutes. Garnish with chopped cilantro, slice, and serve hot.

Notes

Always let the dough come to room temperature before shaping to avoid tearing.

Drain jalapeños and onions well to prevent soggy crust.

Preheat the oven with the stone or steel for at least 30 minutes for best results.
