Ingredients

  • 12 oz fettuccine
  • 12 oz smoked andouille sausage, sliced
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 ½ tablespoons Cajun seasoning (adjust to taste)
  • 1 teaspoon paprika (optional, for extra smokiness)
  • 1 tablespoon olive oil
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper, to taste
  • ½ cup reserved pasta water (as needed)

Instructions

  1. Bring a large pot of salted water to a boil. Cook fettuccine until al dente. Reserve ½ cup pasta water, then drain.
  2. Heat olive oil in a large skillet over medium heat. Add sliced sausage and brown for 3–4 minutes per side. Remove and set aside.
  3. In the same skillet, melt butter. Stir in garlic and cook until fragrant (about 30 seconds).
  4. Add Cajun seasoning and paprika to the butter, stirring to combine.
  5. Return sausage to the pan and toss to coat in the spiced garlic butter.
  6. Add the cooked pasta and toss everything together. Use reserved pasta water to loosen sauce if needed.
  7. Turn off heat and stir in Parmesan. Mix until pasta is evenly coated and glossy.
  8. Sprinkle with chopped parsley, season with salt and black pepper to taste, and serve hot.
