Ingredients

  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup chicken or vegetable broth
  • ½ cup grated Parmesan cheese
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ¼ tsp crushed red pepper flakes (optional)
  • ½ cup reserved pasta water (as needed)

Instructions

  1. Cook the Pasta – Bring a pot of salted water to a boil and cook the spaghetti until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. Sauté Garlic and Sun-Dried Tomatoes – In a large skillet, heat olive oil over medium heat. Add garlic and sun-dried tomatoes, cooking for 1-2 minutes until fragrant.
  3. Make the Sauce – Pour in the heavy cream and broth, then add Parmesan cheese, salt, black pepper, and Italian seasoning. Stir and let it simmer for 3-4 minutes until slightly thickened.
  4. Add the Spinach – Stir in the spinach and cook for 1-2 minutes until wilted.
  5. Combine with Pasta – Add the drained spaghetti to the skillet, tossing everything together. Use reserved pasta water as needed to loosen the sauce.
  6. Serve & Enjoy – Taste and adjust seasoning. Garnish with extra Parmesan cheese and a pinch of crushed red pepper flakes if desired.
