Ingredients
For the Chicken Marinade:
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper, to taste
For the Wraps:
- 4 large flour tortillas
- 1 cup shredded romaine or iceberg lettuce
- 1 cup diced tomatoes
- 1 cup diced bell peppers
- 1/2 red onion, thinly sliced (optional)
- 1/2 cup shredded cheddar or Monterey Jack cheese (optional)
- Optional: Sour cream, Southwest sauce, avocado slices, cilantro, black beans, corn, jalapeño slices
Instructions
- In a bowl, mix olive oil, lime juice, and spices. Coat the chicken breasts in the marinade and refrigerate for 30 minutes or up to 12 hours.
- Heat grill pan or grill over medium-high heat. Grill chicken for 5–7 minutes per side until fully cooked (165°F internal temperature). Let rest, then slice into strips.
- Prep your veggies: chop lettuce, tomatoes, peppers, onions, and any optional add-ons.
- Warm the tortillas in a dry skillet or microwave until soft.
- Assemble each wrap: layer lettuce, veggies, grilled chicken, cheese, and sauce.
- Fold sides in, roll up tightly from the bottom, and slice in half.
