Ingredients
- 2.5 lbs beef chuck roast or stew meat, cut into 1.5-inch cubes
- 1.5 lbs baby potatoes, halved (or quartered if large)
- 5 tablespoons unsalted butter, melted
- 6 garlic cloves, minced or grated
- 1 tablespoon olive oil (for optional searing)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh parsley, for garnish
- 1/2 cup beef broth, low sodium preferred
Instructions
- Trim beef and cut into 1.5-inch cubes. Halve or quarter potatoes. Mince garlic.
- (Optional) Heat olive oil in skillet and sear beef cubes on all sides for 2–3 minutes.
- In a bowl, mix melted butter, garlic, Worcestershire sauce, thyme, rosemary, paprika, salt, pepper, and beef broth.
- Add potatoes to the bottom of the slow cooker. Place beef on top.
- Pour the garlic butter mixture over the meat and potatoes. Toss gently to coat.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours.
- Stir gently before serving and garnish with chopped parsley.
