This hearty dish features tender chunks of beef and baby potatoes, slow-cooked in a rich garlic butter sauce until perfectly infused with flavor. It’s a no-fuss, all-in-one meal that delivers big on taste with minimal prep.


Ingredients

  • 2.5 lbs beef chuck roast or stew meat, cut into 1.5-inch cubes
  • 1.5 lbs baby potatoes, halved (or quartered if large)
  • 5 tablespoons unsalted butter, melted
  • 6 garlic cloves, minced or grated
  • 1 tablespoon olive oil (for optional searing)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley, for garnish
  • 1/2 cup beef broth, low sodium preferred

Instructions

  1. Trim beef and cut into 1.5-inch cubes. Halve or quarter potatoes. Mince garlic.
  2. (Optional) Heat olive oil in skillet and sear beef cubes on all sides for 2–3 minutes.
  3. In a bowl, mix melted butter, garlic, Worcestershire sauce, thyme, rosemary, paprika, salt, pepper, and beef broth.
  4. Add potatoes to the bottom of the slow cooker. Place beef on top.
  5. Pour the garlic butter mixture over the meat and potatoes. Toss gently to coat.
  6. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours.
  7. Stir gently before serving and garnish with chopped parsley.
