Ingredients
3–4 pounds chuck roast
4 cups low-sodium beef broth
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
4 cloves garlic, minced

1 teaspoon dried thyme
1 bay leaf
Salt and black pepper, to taste
8 slices provolone cheese
4 hoagie rolls or French sandwich rolls
2 tablespoons butter (optional, for toasting rolls)
Instructions
1. Season the chuck roast generously with salt and pepper. Optional: sear the meat in a skillet until browned on all sides.
2. Place sliced onions and garlic in the bottom of the slow cooker.
3. Add the roast on top, then pour in beef broth, Worcestershire sauce, and soy sauce. Add thyme and bay leaf.
4. Cover and cook on low for 8 hours or on high for 4–5 hours, until the beef is fork-tender.
5. Remove the roast and shred using two forks. Discard excess fat.
6. Strain the broth to remove solids if desired, reserving it for au jus.
7. Slice rolls, optionally butter them, and toast until golden.

9. Melt the cheese under a broiler or in the oven until bubbly.
