Ingredients

2 pounds boneless skinless chicken breasts

2 cups red enchilada sauce

1 can (10 ounces) diced tomatoes with green chilies drained

1 can (15 ounces) black beans drained and rinsed

1 cup corn kernels

1/2 cup diced onion

1/2 cup diced bell pepper

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

8 small corn tortillas cut into pieces

3 cups shredded Mexican cheese blend

1/4 cup chopped fresh cilantro

1/2 cup sour cream


Instructions

1. Lightly grease the slow cooker and spread enchilada sauce on the bottom.

2. Place chicken in the slow cooker and season evenly with spices.

3. Pour enchilada sauce over the chicken.

4. Add black beans, corn, onion, bell pepper, and tomatoes.

5. Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours until chicken reaches 165°F.

6. Shred the chicken and mix well with the sauce and vegetables.

7. Layer tortillas, sauce, and cheese over the mixture.

8. Repeat layers and finish with cheese on top.

9. Cook an additional 30 to 45 minutes until cheese is melted.

10. Let rest 10 to 15 minutes before serving.
