Description
A cozy, hearty dish that layers saucy, tangy sloppy joe meat beneath a golden, cheesy cornbread crust. It’s quick to prep, satisfying to eat, and perfect for family dinners or potlucks.
Ingredients
1 pound ground beef
1 small onion, chopped
2 cloves garlic, minced
1 cup tomato sauce
1/3 cup ketchup
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1 teaspoon yellow mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 box (8.5 ounces) cornbread mix
2 large eggs
1/3 cup milk
1 cup shredded cheddar cheese
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
3. Add onion and garlic to the skillet and sauté until softened, about 3–4 minutes.
4. Stir in tomato sauce, ketchup, Worcestershire, brown sugar, mustard, salt, and pepper. Simmer for 5–7 minutes until slightly thickened.
5. Spread the beef mixture evenly into the prepared baking dish.
6. In a bowl, mix cornbread mix, eggs, milk, and shredded cheddar until just combined.
7. Pour the batter over the meat and spread gently to cover.
8. Bake for 25–30 minutes or until the top is golden and a toothpick comes out clean.
9. Let cool for 5–10 minutes before serving.
Notes
Let the meat mixture cool slightly before adding cornbread to avoid uneven baking.
Don’t overmix the cornbread batter — stir until just combined for best texture.
Make sure to drain the beef well so the casserole doesn’t get greasy.
