Ingredients

2 lbs Yukon Gold potatoes

1/4 cup olive oil

1/4 cup fresh lemon juice

3 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup vegetable broth or water


Instructions

1. Preheat the oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.

2. Cut the potatoes into thick wedges, about 6–8 per potato.

3. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and broth.

4. Toss the potatoes in the marinade until fully coated.

5. Arrange potatoes in a single layer on the baking dish, cut side down.

6. Roast for 40 minutes, then baste with pan juices and flip each wedge.

7. Increase oven temperature to 425°F (220°C) and roast for another 15–20 minutes until crispy.

8. Sprinkle with sea salt and serve hot with lemon wedges.

Notes

Be sure not to overcrowd the pan; use two pans if needed to ensure crispiness.

Fresh lemon juice and real garlic make a huge difference—don’t substitute if you can avoid it.

For extra crunch, broil the potatoes for the last 2–3 minutes, keeping a close eye on them.
