Ingredients
1 sheet puff pastry
2 medium apples, diced
2 tablespoons granulated sugar
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg (optional)
1 teaspoon lemon juice
1 tablespoon cornstarch
1 egg, beaten
1 tablespoon coarse sugar for topping
Instructions
1. Thaw puff pastry in the fridge until pliable, about 1–2 hours.
2. Roll out pastry and cut into rectangles.
3. In a bowl, mix apples with sugars, cinnamon, nutmeg, lemon juice, and cornstarch.
4. Let apple mixture sit for 10 minutes.
5. Spoon filling onto one side of each pastry rectangle.
6. Slice slits in the top half (optional) and fold over, sealing the edges.
7. Brush with egg wash and sprinkle coarse sugar on top.
8. Bake at 400°F (200°C) for 20–25 minutes until golden brown.
9. Cool slightly and serve warm or at room temperature.
Notes
Chill the filled pastries for 10 minutes before baking to help them puff better.
Use all-butter puff pastry for a richer flavor and flakier texture.
Don’t skip the cornstarch — it keeps the filling from leaking out.
