Ingredients
9 oz cheese tortellini
12 oz raw shrimp, peeled and deveined
1 cup heavy cream
2 tablespoons butter
3 cloves garlic, minced
3/4 cup grated Parmesan cheese
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Fresh basil or parsley, for garnish
Instructions
1. Bring a large pot of salted water to a boil. Add cheese tortellini and cook according to package directions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
2. Heat olive oil in a large skillet over medium heat. Add shrimp in a single layer. Season with salt and pepper. Cook for 1–2 minutes per side until pink and opaque. Remove and set aside.
3. In the same skillet, reduce heat to medium-low. Add butter and minced garlic. Sauté for 30 seconds until fragrant.
4. Slowly pour in the heavy cream, stirring continuously. Let it simmer for 2–3 minutes.
5. Stir in grated Parmesan until fully melted and sauce slightly thickens. Add red pepper flakes if using.
6. Add the cooked tortellini back to the skillet. Toss to coat in the sauce.
7. Gently fold in the cooked shrimp and their juices. Warm everything through for 2–3 minutes.
8. Garnish with fresh basil or parsley. Serve immediately.
Notes
Use freshly grated Parmesan for the best texture and flavor.
Don’t overcook the shrimp—2 minutes per side is enough.
Add a splash of reserved pasta water to thin out the sauce if it thickens too much.
