A vibrant and delicious Shrimp Burrito Bowl loaded with spiced shrimp, sautéed peppers, fluffy rice, creamy avocado, and zesty lime. Quick to make, easy to customize, and perfect for meal prep or weeknight dinners.
Ingredients
- 1 lb medium or large raw shrimp, peeled and deveined
- 2 tablespoons olive oil (divided)
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and black pepper to taste
- 2 cups cooked white rice
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 avocado, sliced
- Juice of 1 lime (plus extra wedges for serving)
- 1/4 cup fresh cilantro, chopped
Instructions
- Pat shrimp dry. In a bowl, toss shrimp with 1 tablespoon olive oil, garlic powder, paprika, chili powder, cumin, salt, and pepper.
- Heat a skillet over medium-high heat. Add shrimp and cook 2-3 minutes per side, until pink and cooked through. Set aside.
- In the same skillet, add remaining olive oil. Sauté diced bell peppers for 4-5 minutes, until tender-crisp. Season lightly.
- Assemble bowls: add a serving of rice to each bowl, then top with sautéed peppers, cooked shrimp, avocado slices, and cilantro.
- Squeeze fresh lime juice over the top. Add optional toppings like sour cream, cheese, or hot sauce.
