Ingredients

  • 1 ½ pounds flank steak, thinly sliced against the grain
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium red onion, sliced into wedges
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Juice of 1 lime

Optional toppings:

  • Warm tortillas (flour or corn)
  • Fresh cilantro, chopped
  • Sour cream or Greek yogurt
  • Sliced avocado or guacamole
  • Pico de gallo or salsa
  • Shredded cheese
  • Lime wedges

Instructions

  1. Preheat your oven to 425°F (220°C). Optionally, preheat the sheet pan in the oven for extra sear.
  2. Slice the steak thinly against the grain. Prepare bell peppers and onion into thin strips.
  3. In a large mixing bowl, toss steak and vegetables with olive oil, all spices, salt, and pepper.
  4. Spread the mixture evenly in a single layer on the sheet pan. Avoid overcrowding.
  5. Roast for 15–18 minutes, stirring halfway through, until steak is cooked and veggies are tender.
  6. Remove from oven and squeeze lime juice over the top.
  7. Serve in warm tortillas with desired toppings.
