Ingredients

1 sheet puff pastry, thawed

6 oz brie cheese, rind removed and cut into small cubes

0.5 cup whole berry cranberry sauce

1 egg, for egg wash (optional)

1 tsp fresh rosemary, finely chopped

1 tbsp honey (optional, for drizzling)

Flour, for dusting

Cooking spray or butter, for greasing muffin tin


Instructions

1. Lightly flour your work surface and roll out the puff pastry sheet until it’s smooth and slightly thinner. Cut the sheet into 12 even squares.

2. Lightly spray or butter a mini muffin tin. Press each puff pastry square into the cups, letting the corners rise slightly.

3. Place a cube of brie into the center of each tartlet shell.

4. Top each with a teaspoon of cranberry sauce, careful not to overfill.

5. Sprinkle with a pinch of chopped rosemary and optionally drizzle with honey.

6. Brush the exposed pastry edges with a beaten egg for a golden finish.

7. Preheat oven to 375°F (190°C). Bake for 15–18 minutes until pastry is golden and cheese is melted.

8. Let cool for 5 minutes, then transfer to a rack. Garnish with rosemary or a honey drizzle before serving.

Notes

Use cold puff pastry for best flakiness — warm dough won’t puff up properly.

Don’t overfill the tartlets — a small amount of filling goes a long way.
