Ingredients

1 tablespoon olive oil

1 pound Italian sausage

1 small yellow onion, chopped

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

9 ounces cheese tortellini

3 cups chopped kale, stems removed

1/2 teaspoon crushed red pepper flakes (optional)

Salt and black pepper, to taste


Instructions

1. Heat olive oil in a large pot over medium-high heat. Add the sausage and cook until browned and crumbled. Remove and set aside.

2. In the same pot, sauté onion until soft, about 4 minutes. Add garlic and cook for 30 seconds until fragrant.

3. Pour a splash of broth to deglaze the pot, scraping up brown bits. Add the rest of the broth and bring to a simmer.

4. Stir in tortellini and kale. Cook according to tortellini package directions (usually 4–6 minutes).

5. Reduce heat and stir in cream. Return the sausage to the pot and let simmer for 3–4 minutes.

6. Season with salt, pepper, and crushed red pepper flakes as needed. Serve hot.

Notes

For a lighter version, substitute heavy cream with half-and-half or whole milk.

If using frozen tortellini, add 2 extra minutes to the cooking time.

To freeze the soup, store the base without tortellini and add fresh pasta when reheating.
