Ingredients
4 breakfast sausage links, sliced
3 medium Yukon gold potatoes, diced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 small yellow onion, diced
1 cup shredded cheddar cheese
2 tablespoons olive oil or butter
Salt and black pepper to taste
1/2 teaspoon paprika
1/4 teaspoon garlic powder
2 tablespoons chopped green onions or chives
Instructions
1. Wash and dice the potatoes into small cubes and slice sausage into bite-sized rounds. Chop the onions and bell peppers.
2. Bring a pot of salted water to a boil and parboil the diced potatoes for 5-6 minutes. Drain and pat dry.
3. Heat a cast iron skillet over medium-high heat. Add oil if needed and brown the sausage slices until crispy, then remove and set aside.
4. In the same skillet, add onions and peppers. Season with salt, pepper, paprika, and garlic powder. Cook until softened, 5-8 minutes.
5. Add the drained potatoes to the skillet. Spread them evenly and cook undisturbed until golden and crispy. Stir occasionally to crisp all sides.
6. Return the cooked sausage to the pan and mix everything together evenly. Sprinkle the shredded cheese over the top.
7. Cover the skillet with a lid and let the cheese melt for 1-2 minutes.
8. Garnish with chopped green onions or chives. Serve hot directly from the skillet.
