Ingredients

1 pound ground breakfast sausage

6 large eggs

2 cups shredded sharp cheddar cheese

1/2 cup milk or heavy cream

3 cups frozen hash browns (thawed)

1/2 cup chopped onions

1/2 cup chopped bell peppers

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon salt

Cooking spray or butter (for greasing the baking dish)


Instructions

1. In a large skillet over medium heat, cook the sausage until browned and cooked through. Drain excess grease and set aside.

2. If using, sauté onions and bell peppers in the same skillet until soft, about 3–4 minutes.

3. In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper until smooth.

4. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.

5. Spread the thawed hash browns evenly in the dish, followed by sausage, sautéed veggies, and half the shredded cheese.

6. Pour the egg mixture evenly over the top and gently press ingredients down with a spatula to soak.

7. Sprinkle remaining cheese on top.

8. Bake for 40–45 minutes until the center is set and the top is golden brown.

9. Let rest for 10 minutes before slicing and serving.

10. Garnish with parsley or green onions if desired.
