Ingredients
- 12 oz smoked sausage, sliced
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1/4 cup honey
- 3 garlic cloves, minced
- 1 tbsp soy sauce
- 1 tsp Dijon mustard
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread evenly on the baking sheet.
- Roast sweet potatoes for 20 minutes, flipping halfway.
- While potatoes roast, combine honey, garlic, soy sauce, and Dijon mustard in a saucepan. Simmer for 3–5 minutes until slightly thickened.
- Add sliced sausage to the baking sheet and drizzle sauce over everything. Toss gently.
- Return to oven and roast for 15 more minutes.
- Remove from oven, sprinkle with chopped parsley, and serve hot.
