Ingredients
1 lb shrimp, peeled and deveined
1/2 cup cornstarch
1/2 tsp salt
1/2 tsp freshly ground black pepper
3 cloves garlic, thinly sliced
2 fresh red chilies, sliced
2 scallions, chopped
1 1/2 cups oil, for frying
1 tbsp oil, for tossing
2 tbsp chopped cilantro (optional garnish)
1 tsp toasted sesame seeds (optional garnish)
Instructions
1. Rinse the shrimp thoroughly and pat dry with paper towels until no moisture remains.
2. In a mixing bowl, toss the shrimp with cornstarch, salt, and pepper to evenly coat each piece.
3. Heat the oil in a large skillet over medium-high heat. Once hot, fry the shrimp in batches for 2–3 minutes per side until golden and crispy. Remove and drain on paper towels.
4. In a separate pan, heat 1 tablespoon of oil and lightly sauté the garlic and sliced chilies for 1–2 minutes until fragrant. Add scallions and stir for another 30 seconds.
5. Return the fried shrimp to the pan and toss everything together briefly to coat in the aromatics. Serve immediately with optional cilantro and sesame seeds.
Notes
Pat the shrimp very dry to ensure maximum crispiness when frying.
Use cornstarch instead of flour for a lighter, more delicate crust.
