Ingredients
- 1 lb shrimp, peeled and deveined (tails on optional)
- 1 lb mussels, scrubbed and debearded
- 1 lb clams, scrubbed
- 3 tbsp butter
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 2 shallots, finely chopped (or 1 small onion)
- 1/2 cup dry white wine
- 4 cups seafood or chicken stock
- 1 cup heavy cream
- Salt and freshly ground black pepper, to taste
- 2 tbsp chopped fresh parsley
- Lemon wedges, for serving
Instructions
- Clean the mussels and clams thoroughly. Peel and devein the shrimp. Keep seafood chilled until ready to use.
- In a large pot or Dutch oven, heat butter and olive oil over medium heat. Add shallots and sauté until soft. Add garlic and cook 30 seconds more.
- Pour in white wine, deglazing the pot. Simmer 2–3 minutes until slightly reduced.
- Add the stock, bring to a simmer, and season with salt and pepper. Simmer for 10 minutes.
- Add clams and mussels. Cover and cook 5–7 minutes, until shells open. Discard any unopened ones.
- Add shrimp and simmer 3–4 minutes until pink and opaque.
- Lower heat, stir in cream, and heat gently (do not boil). Taste and adjust seasoning.
- Serve hot, garnished with parsley and lemon wedges. Don’t forget crusty bread for dipping!
