Ingredients
1 1/4 cups all-purpose flour
1/2 cup unsalted butter, cold and cubed
1/4 teaspoon salt
3 to 4 tablespoons ice water
3 Honeycrisp apples, peeled, cored, and thinly sliced
1 tablespoon lemon juice
2 tablespoons granulated sugar
1 tablespoon brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons honey
1 egg, beaten (for egg wash)
Powdered sugar, for garnish (optional)
Instructions
1. In a large bowl, combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Add ice water one tablespoon at a time until dough forms. Shape into a disc, wrap in plastic, and chill for 1 hour.
2. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
3. Toss thinly sliced apples with lemon juice, granulated sugar, brown sugar, and cinnamon. Set aside.
4. Roll dough into a 12-inch circle on a lightly floured surface. Transfer to the baking sheet.
5. Arrange apple slices in concentric circles in the center, leaving a 2-inch border. Drizzle honey over the apples.
6. Fold the edges of the dough over the apples, pleating as you go.
7. Brush crust with beaten egg and sprinkle with extra sugar if desired.
8. Bake for 40–45 minutes until crust is golden and apples are tender.
9. Cool for 10–15 minutes before slicing. Garnish with powdered sugar or serve with ice cream if desired.
Notes
Always use cold butter and ice water to keep the crust tender and flaky.
Avoid overfilling the apple layer to prevent a soggy crust.
Let the galette cool slightly before slicing to allow the filling to set.
