Ingredients
2 cups shredded rotisserie chicken
8 oz rice noodles
6 cups chicken broth
1 onion, halved
1 3-inch piece fresh ginger, sliced
2 star anise pods
4 whole cloves
1 cinnamon stick
1 tsp coriander seeds
2 tbsp fish sauce
1 lime, cut into wedges
1/2 cup chopped scallions
1/2 cup chopped cilantro
1/2 cup bean sprouts (optional)
1/4 cup Thai basil leaves (optional)
1 jalapeño, thinly sliced (optional)
1 tbsp chili paste or sriracha (optional)
Instructions
1. Toast star anise, cloves, cinnamon, and coriander seeds in a dry pot for 1–2 minutes until fragrant.
2. Add onion and ginger to the pot and pour in chicken broth. Bring to a boil, then reduce heat and simmer for 20–30 minutes.
3. Cook rice noodles according to package instructions, then drain and rinse with cool water. Set aside.
4. Shred the rotisserie chicken into bite-sized pieces.
