Ingredients

1 package (14 oz) chocolate graham crackers or chocolate wafer cookies, crushed

6 tablespoons unsalted butter, melted

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 1/2 cups heavy whipping cream (or 8 oz Cool Whip)

1 package (3.9 oz) instant chocolate pudding mix

2 cups cold milk

1 1/2 cups heavy whipping cream (or 8 oz Cool Whip)

2 tablespoons powdered sugar (if using real cream)

1 1/2 cups fresh raspberries (plus extra for garnish)

1/2 cup semi-sweet chocolate chips or melting chocolate

Shaved chocolate or grated dark chocolate (optional)

Powdered sugar (optional)


Instructions

1. Combine crushed chocolate graham crackers with melted butter. Mix well and press firmly into the bottom of a 9×13 inch dish. Chill to firm up.

2. Beat softened cream cheese until smooth. Add powdered sugar and vanilla, mix well. In a separate bowl, whip 1 1/2 cups cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture.

3. Spread the cream cheese layer evenly over the crust. Gently press half the raspberries into this layer.

4. In a bowl, whisk chocolate pudding mix with cold milk for 2 minutes. Let it thicken, then spread over the cream layer.

5. Whip the remaining 1 1/2 cups cream with 2 tablespoons powdered sugar (or use Cool Whip). Spread over the pudding layer.

6. Top with remaining raspberries. Melt chocolate chips and drizzle over the top. Add optional toppings like shaved chocolate or powdered sugar.

7. Chill for at least 4 hours or overnight for best results. Slice and serve cold.
