2 pounds Yukon Gold or Russet potatoes, peeled and cut into chunks

4 tablespoons unsalted butter, plus extra for serving

1/2 cup whole milk (or heavy cream)

1/2 cup shredded gouda cheese (smoked if preferred)

Freshly ground black pepper, to taste

Instructions

1. Peel and cut potatoes into even-sized chunks, then rinse under cold water.

7. Stir the milk-butter mixture into the potatoes gradually.

8. Fold in shredded gouda cheese until fully melted and incorporated.

9. Season with salt and pepper to taste.

Notes

For extra flavor, try smoked gouda instead of regular.
