- 1 pint fresh oysters with liquor
- 3 tablespoons butter
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1/2 cup whole milk
- 1 cup heavy cream
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley or chives
- Optional: 1/4 cup finely chopped celery or leeks
Instructions
- In a medium saucepan, melt the butter over medium heat.
- Add chopped onion (and celery/leeks if using) and sauté until soft, about 4–5 minutes.
- Stir in the minced garlic and cook for another 30 seconds until fragrant.
