Ingredients
- 2 cups pecan halves (or walnuts)
- 1 cup granulated sugar
- 1/4 cup unsalted butter
- 1/4 cup heavy cream
- 1 tsp vanilla extract
- 1/2 tsp salt
- Optional: 1/2 tsp ground cinnamon or cayenne pepper
Instructions
- Preheat oven to 350°F (175°C) and toast pecans for 6–8 minutes. Set aside.
- Line a baking sheet with parchment paper or a silicone mat.
- In a heavy-bottomed saucepan, melt butter over medium heat.
- Add sugar and stir until partially dissolved.
- Pour in heavy cream, stir continuously, and bring to a gentle boil.
- Cook for 5–7 minutes, reaching soft-ball stage (235–240°F), stirring constantly.
- Remove from heat and stir in vanilla extract, salt, and optional spices.
- Add toasted nuts and stir to coat evenly.
- Spread coated nuts on the prepared sheet and let cool for 30 minutes.
- Break into clusters and store in an airtight container.
