Description

Pistachio Pudding Sugar Cookie Bars are a delicious dessert combining a soft sugar cookie base with a creamy pistachio pudding topping. Garnished with crunchy pistachios, these bars are easy to make and perfect for sharing at any event or gathering.


Ingredients

For the Cookie Base

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

For the Pistachio Pudding Layer

  • 1 (3.4 oz) box instant pistachio pudding mix
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped pistachios (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking pan.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, and beat until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  4. Press the dough evenly into the prepared pan and bake for 12–15 minutes, or until the edges are lightly golden. Allow to cool completely.
  5. For the pudding layer, whisk together the pistachio pudding mix, milk, and heavy cream. Refrigerate for 5-10 minutes to thicken.
  6. Once the cookie base has cooled, spread the pistachio pudding evenly over the top.
  7. Garnish with chopped pistachios, pressing them lightly into the pudding layer.
  8. Refrigerate the bars for at least 2 hours before cutting and serving.
