Pistachio Pudding Sugar Cookie Bars are a delicious dessert combining a soft sugar cookie base with a creamy pistachio pudding topping. Garnished with crunchy pistachios, these bars are easy to make and perfect for sharing at any event or gathering.
Ingredients
For the Cookie Base
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
For the Pistachio Pudding Layer
- 1 (3.4 oz) box instant pistachio pudding mix
- 1 1/2 cups milk
- 1/2 cup heavy cream
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped pistachios (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking pan.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, and beat until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Press the dough evenly into the prepared pan and bake for 12–15 minutes, or until the edges are lightly golden. Allow to cool completely.
- For the pudding layer, whisk together the pistachio pudding mix, milk, and heavy cream. Refrigerate for 5-10 minutes to thicken.
- Once the cookie base has cooled, spread the pistachio pudding evenly over the top.
- Garnish with chopped pistachios, pressing them lightly into the pudding layer.
- Refrigerate the bars for at least 2 hours before cutting and serving.
