Tender strips of beef slow-cooked in a savory soy-based sauce with colorful bell peppers and onions. This Pepper Steak in a Crock Pot is perfect for a hands-off, comforting dinner that bursts with flavor.
Ingredients
- 1.5 lbs beef sirloin or flank steak, thinly sliced
- 3 bell peppers (red, green, yellow), cut into chunks
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1/3 cup soy sauce
- 1 cup beef broth
- 2 tablespoons brown sugar
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- Salt and black pepper to taste
- 1 teaspoon sesame oil (optional)
Instructions
- Slice the beef into thin strips and season with salt and pepper.
- Place the beef at the bottom of the slow cooker.
- Add bell peppers and onion on top.
- In a small bowl, whisk together soy sauce, beef broth, garlic, brown sugar, and red pepper flakes.
- Pour the sauce mixture over the meat and vegetables.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- In the last 30 minutes of cooking, mix cornstarch with cold water and stir into the slow cooker.
- Cook until the sauce thickens, then add sesame oil if using.
- Serve hot over rice, noodles, or mashed potatoes.
