Pecan Pie Balls are a no-bake, bite-sized dessert that channels the rich, nutty flavor of traditional pecan pie. Made with Medjool dates, raw pecans, vanilla, and a hint of cinnamon, each ball is finished with a dark chocolate drizzle. Perfect for gifting, snacking, or a healthier dessert option, these balls are chewy, sweet, and totally addictive.
Ingredients
For the base:
- 1 ½ cups pitted Medjool dates
- 1 ¼ cups raw pecan halves
- ¼ teaspoon ground cinnamon
- ½ teaspoon pure vanilla extract
- Pinch of sea salt
Optional add-ins:
- 2 tbsp almond flour or oats
- Extra chopped pecans
For the chocolate drizzle:
- ½ cup dark chocolate chips (vegan if needed)
- 1 tsp coconut oil (optional)
Instructions
- Soak dates in warm water for 10 minutes if dry; drain well.
- In a food processor, combine dates, pecans, cinnamon, vanilla, and salt.
- Blend until the mixture is sticky and forms a dough. Add almond flour if needed.
- Fold in chopped pecans if using.
- Roll into bite-sized balls using a scoop or damp hands.
- Place on parchment-lined tray and chill for 15–20 minutes.
- Melt chocolate with coconut oil until smooth.
- Drizzle chocolate over chilled balls.
- Let set in fridge, then store in airtight container.
