Description

Pecan Pie Balls are a no-bake, bite-sized dessert that channels the rich, nutty flavor of traditional pecan pie. Made with Medjool dates, raw pecans, vanilla, and a hint of cinnamon, each ball is finished with a dark chocolate drizzle. Perfect for gifting, snacking, or a healthier dessert option, these balls are chewy, sweet, and totally addictive.


Ingredients

For the base:

  • 1 ½ cups pitted Medjool dates
  • 1 ¼ cups raw pecan halves
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon pure vanilla extract
  • Pinch of sea salt

Optional add-ins:

  • 2 tbsp almond flour or oats
  • Extra chopped pecans

For the chocolate drizzle:

  • ½ cup dark chocolate chips (vegan if needed)
  • 1 tsp coconut oil (optional)

Instructions

  1. Soak dates in warm water for 10 minutes if dry; drain well.
  2. In a food processor, combine dates, pecans, cinnamon, vanilla, and salt.
  3. Blend until the mixture is sticky and forms a dough. Add almond flour if needed.
  4. Fold in chopped pecans if using.
  5. Roll into bite-sized balls using a scoop or damp hands.
  6. Place on parchment-lined tray and chill for 15–20 minutes.
  7. Melt chocolate with coconut oil until smooth.
  8. Drizzle chocolate over chilled balls.
  9. Let set in fridge, then store in airtight container.
