Description
Golden and crispy on the outside, tender and fluffy inside, these Parmesan Roasted Potatoes are packed with garlic, herbs, and nutty cheese. Perfect as a side dish or a snack, they’re quick to make and always a crowd-pleaser.
Ingredients
- 1.5 lbs baby potatoes, halved
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Optional: 2 tablespoons crispy bacon bits
Instructions
- Preheat oven to 425°F (220°C).
- Wash and dry baby potatoes thoroughly. Cut each in half.
- In a large bowl, toss potatoes with olive oil, minced garlic, salt, and pepper.
- Line a baking sheet with parchment paper. Arrange potatoes cut-side down in a single layer.
- Roast for 30–35 minutes or until golden and fork-tender.
- Sprinkle Parmesan evenly over the potatoes. Return to oven for 5 minutes.
- Remove from oven and sprinkle with fresh parsley and optional bacon bits.
- Serve hot and enjoy.
