Parmesan Roasted Potatoes

Description

Golden and crispy on the outside, tender and fluffy inside, these Parmesan Roasted Potatoes are packed with garlic, herbs, and nutty cheese. Perfect as a side dish or a snack, they’re quick to make and always a crowd-pleaser.


Ingredients

  • 1.5 lbs baby potatoes, halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Optional: 2 tablespoons crispy bacon bits

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash and dry baby potatoes thoroughly. Cut each in half.
  3. In a large bowl, toss potatoes with olive oil, minced garlic, salt, and pepper.
  4. Line a baking sheet with parchment paper. Arrange potatoes cut-side down in a single layer.
  5. Roast for 30–35 minutes or until golden and fork-tender.
  6. Sprinkle Parmesan evenly over the potatoes. Return to oven for 5 minutes.
  7. Remove from oven and sprinkle with fresh parsley and optional bacon bits.
  8. Serve hot and enjoy.
