Ingredients

  • 2 lbs Yukon Gold potatoes, peeled and thinly sliced
  • 2 cups heavy cream
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground nutmeg (optional)
  • 1 cup grated Gruyère cheese
  • 3/4 cup freshly grated Parmesan cheese
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • 1 tbsp unsalted butter (for greasing)

Optional Garnish:

  • Fresh thyme or chopped chives

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with butter.
  2. Peel and slice potatoes to about 1/8 inch thickness.
  3. In a saucepan, warm the cream with garlic, salt, pepper, and nutmeg until just simmering. Remove from heat.
  4. Layer half the potatoes in the baking dish, overlapping slightly. Sprinkle with half of the Gruyère, Parmesan, and thyme.
  5. Add remaining potatoes in another layer. Pour the cream mixture over everything.
  6. Top with the rest of the cheeses and thyme.
  7. Cover with foil and bake for 40 minutes.
  8. Remove foil and bake uncovered for another 20–25 minutes, until the top is golden and bubbly.
  9. Let rest 10–15 minutes before serving. Garnish as desired.
