This Overnight Crème Brûlée French Toast is a decadent, make-ahead breakfast that combines the creamy texture of custard with a caramelized, buttery base. Soaked overnight in a rich mixture of eggs, cream, and vanilla, then baked until golden and bubbling, it’s perfect for brunch, holidays, or any special morning.
Ingredients
- 1/2 cup (1 stick) unsalted butter
- 1 cup packed brown sugar
- 2 tablespoons corn syrup (optional)
- 1 loaf brioche or challah, sliced 3/4 to 1 inch thick
- 5 large eggs
- 1 cup heavy cream
- 1 cup whole milk
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a saucepan, melt the butter over medium heat. Stir in brown sugar and corn syrup until smooth and bubbling.
- Pour the caramel mixture into a greased 9×13-inch baking dish, spreading it evenly.
- Arrange the bread slices in a single layer over the caramel, slightly overlapping if needed.
- In a large bowl, whisk together eggs, heavy cream, milk, vanilla, and salt until smooth.
- Pour the custard evenly over the bread. Press the bread gently to help it absorb the liquid.
- Cover the dish tightly and refrigerate overnight.
- In the morning, preheat oven to 350°F (175°C). Remove dish from refrigerator.
- Bake uncovered for 35 to 45 minutes, until the top is golden and the custard is mostly set.
- Let rest for 5 to 10 minutes before serving. Spoon servings upside-down to highlight the caramel base.
