Instructions

1. Preheat your oven to 425°F (220°C) and prepare a large baking sheet with parchment or light oil.

2. In a large bowl, toss cubed chicken with 1 tbsp olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, black pepper, and red pepper flakes if using.

3. In another bowl, mix the halved potatoes with 1 tbsp olive oil, minced garlic, and a pinch of salt and pepper.

4. Spread chicken and potatoes evenly on the sheet pan in a single layer without overcrowding.

5. Roast in the oven for 25–30 minutes, flipping everything halfway through for even browning.

6. Remove from oven and immediately sprinkle with grated Parmesan while hot so it melts slightly.
