Ingredients
200g feta cheese, crumbled
50g cream cheese (optional)
1 tablespoon finely chopped fresh mint (optional)
2 tablespoons chopped sun-dried tomatoes or roasted red peppers
10 sheets phyllo pastry, thawed
4 tablespoons olive oil or melted butter
2 tablespoons sesame seeds
1 teaspoon chili flakes
3 tablespoons honey
1/2 teaspoon chili flakes
1/2 teaspoon lemon juice or apple cider vinegar
Instructions
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a bowl, mix crumbled feta, optional cream cheese, chopped mint, and sun-dried tomatoes.
3. Lay one phyllo sheet on a clean surface. Brush lightly with olive oil or butter. Layer a second sheet on top and repeat brushing. Stack 2–3 sheets total.
4. Place 1 tablespoon of filling near the short edge. Fold sides inward and roll into a tight log. Place seam-side down on the baking sheet.
5. Repeat with remaining sheets and filling.
6. Brush tops with oil or butter. Sprinkle with sesame seeds and chili flakes.
7. Bake for 18–22 minutes, or until golden and crisp. Rotate the tray halfway through.
8. While baking, warm honey in a small saucepan. Add chili flakes and lemon juice. Simmer 1–2 minutes, then cool slightly.
9. Let rolls cool 2–3 minutes after baking, then drizzle with chili honey before serving.
10. Garnish with fresh mint if desired and serve warm.
