Ingredients
- 4 medium zucchini (sliced 1/4 inch thick)
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- Salt (to taste)
- Black pepper (to taste)
- Fresh herbs (thyme or basil, optional, for garnish)
Instructions

Preheat the oven to 400°F (200°C). Lightly grease a baking dish with olive oil.

Slice the zucchini into even rounds, about 1/4 inch thick. Pat the slices dry with paper towels.

Layer the zucchini in the baking dish, slightly overlapping. Season with salt, pepper, and minced garlic.

Add a layer of cheese, using a mix of mozzarella and Parmesan.

Repeat layers of zucchini and cheese until ingredients are used up, finishing with a generous layer of cheese on top.
