Ingredients

For the Chicken & Sauce

  • Chicken Breast or Thighs (boneless, skinless) – 1 lb, cut into bite-sized pieces
  • Olive Oil – 2 tablespoons
  • Garlic – 4 cloves, minced
  • Honey – 1/3 cup
  • Soy Sauce – 1/4 cup
  • Chicken Broth – 1/2 cup
  • Rice Vinegar or Apple Cider Vinegar – 1 tablespoon
  • Red Pepper Flakes (optional) – 1/2 teaspoon
  • Salt & Pepper – To taste

For the Rice Pasta

  • Rice Pasta (Orzo or Similar) – 1 cup, uncooked
  • Chicken Broth or Water – 2 cups

For Garnish

  • Fresh Parsley – 2 tablespoons, chopped

Instructions

  1. Sear the Chicken: Heat olive oil in a large non-stick skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook for 5–7 minutes until golden brown and cooked through. Remove chicken from the pan and set aside.
  2. Prepare the Sauce: In the same pan, lower heat to medium and add garlic, sautéing for about 30 seconds until fragrant. Stir in honey, soy sauce, rice vinegar, chicken broth, and red pepper flakes. Simmer for 3–4 minutes until thickened.
  3. Cook the Rice Pasta: Add uncooked rice pasta and chicken broth to the skillet. Stir, cover, and let cook for 10–12 minutes, stirring occasionally.
  4. Combine & Finish: Add cooked chicken back to the skillet and simmer for 2–3 more minutes.
  5. Garnish & Serve: Sprinkle with fresh parsley and serve hot.
