Ingredients
1 lb ground beef
2 cups elbow macaroni
1 medium onion, diced

4 cups beef broth
2 tablespoons tomato paste
4 oz cream cheese, cubed
1 cup heavy cream
2 cups shredded cheddar cheese
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1/2 teaspoon paprika (optional)
2 tablespoons chopped parsley or chives, for garnish
Instructions
1. In a large soup pot, brown the ground beef over medium-high heat until fully cooked. Drain excess grease.
2. Add diced onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 30 seconds more.
3. Add diced tomatoes with green chilies, tomato paste, and beef broth. Stir well until tomato paste dissolves.
