Ingredients

1 lb sirloin steak, cut into bite-sized cubes

Salt and freshly ground black pepper, to taste

2 tbsp olive oil

4 tbsp unsalted butter, divided

6 cloves garlic, minced

1/2 tsp red pepper flakes

1 small onion, finely diced

1 tsp smoked paprika

1 tsp garlic powder

2 cups low-sodium beef broth

1 cup heavy cream

8 oz rotini pasta

1/2 cup grated Parmesan cheese

1 tbsp chopped fresh parsley

Optional: a squeeze of lemon juice or splash of white wine


Instructions

1. Pat the steak dry with paper towels and season generously with salt and pepper. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add steak cubes in a single layer and sear on all sides until browned (2–3 minutes per side). Remove steak and set aside.

2. Lower the heat to medium and add 2 tablespoons of butter. Add garlic, red pepper flakes, and onion. Sauté for 2–3 minutes. Stir in paprika and garlic powder.

3. (Optional) Deglaze with white wine or lemon juice. Pour in beef broth and heavy cream. Scrape up browned bits from the bottom of the pan.

4. Add uncooked pasta to the pan. Bring to a boil, then reduce to low and simmer covered for 10–12 minutes, stirring occasionally.

5. Once pasta is al dente and sauce thickened, stir in remaining 2 tablespoons of butter and Parmesan cheese until melted. Return steak and juices to pan and toss everything to coat.

6. Taste and adjust seasoning. Garnish with parsley and serve immediately.

Always sear the steak in batches if needed to get that flavorful crust.
