Ingredients

  • 2 cups elbow macaroni
  • 1 lb boneless chicken breast or thighs, diced
  • 8 oz Andouille sausage, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tbsp Cajun seasoning (adjust to taste)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp olive oil or butter
  • Salt, to taste

Instructions

  1. Heat oil or butter in a large pot over medium heat. Add sliced sausage and cook until browned.
  2. Add diced chicken, season with Cajun seasoning, garlic powder, and onion powder. Cook until browned and fully cooked.
  3. Pour in chicken broth and stir to deglaze the bottom of the pot.
  4. Add elbow macaroni and stir. Simmer uncovered for 10–12 minutes until pasta is tender.
  5. Lower the heat, stir in heavy cream.
  6. Gradually add shredded cheese, stirring until fully melted and sauce is creamy.
  7. Adjust seasoning if needed. Let rest for a couple minutes to thicken.
