Ingredients
- 2 cups elbow macaroni
- 1 lb boneless chicken breast or thighs, diced
- 8 oz Andouille sausage, sliced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 2 tbsp Cajun seasoning (adjust to taste)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp olive oil or butter
- Salt, to taste
Instructions
- Heat oil or butter in a large pot over medium heat. Add sliced sausage and cook until browned.
- Add diced chicken, season with Cajun seasoning, garlic powder, and onion powder. Cook until browned and fully cooked.
- Pour in chicken broth and stir to deglaze the bottom of the pot.
- Add elbow macaroni and stir. Simmer uncovered for 10–12 minutes until pasta is tender.
- Lower the heat, stir in heavy cream.
- Gradually add shredded cheese, stirring until fully melted and sauce is creamy.
- Adjust seasoning if needed. Let rest for a couple minutes to thicken.
