Ingredients
2 large boneless skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
0.5 teaspoon paprika
Salt and freshly ground black pepper to taste
1 tablespoon butter
4 garlic cloves minced
2.5 cups chicken broth (low sodium)
1.5 cups heavy cream
2 cups uncooked penne pasta
1 cup freshly grated parmesan cheese
0.25 teaspoon crushed red pepper flakes (optional)
Fresh parsley chopped for garnish
1 cup baby spinach
0.5 cup chopped sun-dried tomatoes
0.5 cup sliced mushrooms
Instructions
1. Pat chicken dry and season with garlic powder, Italian seasoning, paprika, salt, and pepper.
2. Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and rest.
3. In the same pan, melt butter and sauté minced garlic for 1–2 minutes until fragrant.
4. Pour in chicken broth and heavy cream. Scrape up any browned bits. Bring to a gentle simmer.
5. Stir in uncooked penne pasta. Reduce heat to medium-low, cover, and cook for 12–14 minutes, stirring occasionally.
6. Once pasta is al dente and sauce has thickened, remove pan from heat. Stir in parmesan cheese gradually until melted and smooth.
7. Season with salt, pepper, and optional red pepper flakes to taste.
8. Slice rested chicken and return it to the pan. Let sit 1–2 minutes to warm through.
9. Garnish with fresh parsley and serve immediately. Add a splash of broth or cream if sauce thickens while resting.
Notes
Use freshly grated parmesan to ensure a smooth and creamy sauce — pre-shredded cheeses may clump.
Avoid high heat when adding cheese; turn off the burner before mixing it in to prevent graininess.
A splash of broth or cream can bring back the sauce’s silky texture if it thickens too much after cooking.
