Ingredients
- 2 boneless, skinless chicken breasts, diced
- 8 oz elbow macaroni (or similar pasta)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 ½ cups chicken broth
- 1 ½ cups milk
- 1 cup marinara sauce
- 1 ½ cups shredded cheddar cheese
- ½ cup freshly grated parmesan cheese
- ½ teaspoon Italian seasoning
- Salt and pepper, to taste

Instructions
- Heat olive oil in a large nonstick pot or deep skillet over medium-high heat.
- Add diced chicken, season with salt, pepper, and Italian seasoning. Cook 5–7 minutes until golden and cooked through. Remove and set aside.
- Lower heat to medium. Add garlic and sauté 30 seconds until fragrant.
- Pour in chicken broth, milk, and marinara. Stir to combine.
- Add pasta and stir. Bring to a simmer, cover, and cook 10–12 minutes, stirring occasionally.
- Once pasta is tender, lower heat and stir in cheddar and half of the parmesan until melted.
- Return cooked chicken to the pot and stir to combine.
- Adjust seasoning. Garnish with remaining parmesan and herbs if desired. Serve hot.
