Ingredients

  • 1.5 lbs chicken thighs or breasts, cut into bite-sized pieces
  • 3 cups cooked white rice (or brown rice for a healthier option)
  • 1/3 cup soy sauce (or tamari for gluten-free)
  • 1/3 cup BBQ sauce
  • 3 tbsp honey or brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp sesame oil
  • 1 tbsp cornstarch (optional, for thickening)
  • 2 tbsp water (if using cornstarch)
  • 2 tbsp chopped scallions, for garnish
  • 1 tbsp sesame seeds, for garnish
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Heat a large skillet over medium-high heat and add sesame oil. Add chicken pieces and cook until golden brown and cooked through, about 6-8 minutes. Remove and set aside.
  2. In the same skillet, add more sesame oil if needed. Sauté garlic and ginger until fragrant, about 1 minute.
  3. Add soy sauce, BBQ sauce, honey (or brown sugar), and a splash of water. Stir well to combine.
  4. To thicken the sauce, mix cornstarch with water and stir it into the sauce. Let it simmer for 2-3 minutes until thickened.
  5. Return cooked chicken to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes to let the chicken absorb the flavors.
  6. Serve over cooked rice. Garnish with scallions, sesame seeds, and cilantro if desired.
