One-Pan Steak Bites & Cheesy Garlic Butter Noodles

Ingredients

1 pound sirloin steak, cut into bite-sized cubes

1 tablespoon olive oil

1 tablespoon unsalted butter

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

Crushed red pepper flakes, optional

Fresh parsley, chopped

8 ounces rotini pasta

2 tablespoons unsalted butter

3 cloves garlic, minced

0.5 cup heavy cream

0.5 cup freshly grated parmesan cheese

0.5 cup shredded mozzarella cheese

Salt and pepper, to taste

0.25 teaspoon paprika, optional

0.5 cup reserved pasta water, as needed


Instructions

1. Bring a large pot of salted water to a boil. Cook rotini until al dente, then reserve ½ cup pasta water and drain.

2. Pat steak cubes dry and season with salt, pepper, and garlic powder.

3. Heat olive oil in a heavy skillet over medium-high. Sear steak bites in batches for 1–2 minutes per side. Add 1 tbsp butter during the final minute. Remove and tent with foil.

4. Reduce skillet heat to medium. Add 2 tbsp butter and minced garlic. Sauté for 30–60 seconds.

5. Stir in heavy cream, then add both cheeses. Stir until melted and smooth. Season with salt, pepper, and paprika.

6. Add cooked pasta to sauce and toss to coat. Add reserved pasta water to thin as needed.

7. Serve noodles topped with steak bites. Garnish with parsley and extra black pepper.

Notes

Use freshly grated cheese to ensure a smooth and creamy sauce.

Don’t overcrowd the pan when searing steak bites—this helps get that perfect crust.

Add pasta water gradually to control the sauce’s consistency without thinning the flavor.
