Ingredients

2 boneless skinless chicken breasts

1½ tablespoons Cajun seasoning

1 tablespoon olive oil

1 teaspoon brown sugar

Salt and pepper to taste

8 oz fettuccine

1 tablespoon unsalted butter

3 cloves garlic minced

½ teaspoon red pepper flakes

1½ cups heavy cream

½ cup chicken broth

¼ cup grated Parmesan cheese

1 teaspoon brown sugar

Salt and pepper to taste

Fresh chopped parsley for garnish


Instructions

1. Pat the chicken breasts dry and rub with olive oil. Season with Cajun seasoning, brown sugar, salt, and pepper.

2. Heat a cast iron skillet over medium-high. Sear the chicken for 4–5 minutes per side until cooked through. Remove and rest.

3. Lower the heat and melt butter in the same skillet. Sauté minced garlic and red pepper flakes for 30 seconds.

4. Add chicken broth to deglaze the pan. Let simmer for 1–2 minutes. Stir in heavy cream and brown sugar. Season to taste.

5. Add uncooked fettuccine directly to the sauce. Stir well. Cover and cook over medium-low for 10–12 minutes, stirring occasionally.

6. Once pasta is al dente, stir in Parmesan until melted. Add a splash of broth or cream if needed.

7. Slice the rested chicken and layer over the pasta. Simmer for 1–2 minutes to blend flavors.

8. Garnish with parsley, more Parmesan, or red pepper flakes. Serve hot.

Notes

Use low heat when adding cream to prevent the sauce from curdling.

Adjust spice level by increasing or decreasing Cajun seasoning and red pepper flakes.
