Ingredients
1 lb boneless skinless chicken breasts
1 cup orzo pasta
3 cups baby spinach
8 oz mushrooms, sliced
3 cloves garlic, minced
1 small shallot (or 1/4 onion), finely chopped
2 1/2 cups chicken broth
1/2 cup heavy cream
1/2 cup freshly grated Parmesan cheese
2 tbsp olive oil
1/2 tsp salt (or to taste)
1/4 tsp black pepper
1 tbsp fresh chopped parsley (optional, for garnish)
Instructions
1. Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken on both sides until golden and fully cooked, about 4–5 minutes per side. Remove and cover loosely with foil.
2. In the same pan, add mushrooms. Cook for 5–6 minutes until browned and moisture has evaporated. Add shallots and garlic, and sauté for 1–2 minutes until fragrant.
3. Stir in the orzo, letting it toast for 1–2 minutes with the mushrooms and aromatics.
4. Pour in chicken broth. Scrape up brown bits and let the mixture simmer for 8–10 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
5. Stir in heavy cream and reduce heat. Mix until smooth and creamy.
6. Add spinach and cook until just wilted, about 1–2 minutes.
7. Stir in Parmesan cheese until melted. Season with salt and pepper to taste.
8. Slice the chicken and return it to the skillet. Garnish with parsley and extra cheese if desired. Serve warm.
Notes
Toasting the orzo is key for added flavor and texture—don’t skip this step.
Freshly grated Parmesan melts better and avoids a grainy sauce.
If the dish thickens too much after sitting, stir in a splash of broth or cream before serving or reheating.
